This is a great use for leftover steak. Sautee some bread in olive oil until golden, top with thinly sliced steak, beefsteak tomatoes and blue cheese crumbles. I threw these bad boys under the broiler for a few minutes until the cheese softened.
I topped with some Italian flat leaf parsley. It could have used a little bit of tang and I’m thinking next time to spread a little dijon on the bread before layering the steak etc. Other than that perfecto!
